Sorry
I want to say that I am sorry for not getting on here lately. We had Thanksgiving at our house and was very busy. My youngest also has been sick and not feeling well. I spent a whole week trying to get her healthy again. She is finally feeling better. I plan to do a new post in the next day or two to show you some of the fun things we have been doing. I will try to get back soon. Take care.

Slow Cooker Pork Loin
Well I had nothing planned your dinner a couple of days ago and did not want to go to the grocery store. I ended up finding a pork tenderloin down stair in the deep freeze. This recipe was very easy and I had all the ingredient. One of the things that I really liked about the recipe was the great broth that it made. Make sure that when you eat it you use the broth.
Here is the recipe and the website I got it from.

Girl's Night Out Brownies
So if you have been reading my blog regularly you know that I am part of a wonderful mommies group. We do a couple of things a week with the kids and then do a girl's night out once a month. This month it was my turn to pick what to do for the gno. So for this month I decided to take the kids to a wonderful Greek restaurant Scott found by luck one day. The name of the restaurant is called Jim and Jennies Greek Village. I really like the owners and they are so nice to my kids. The food is also great. It was a success with my friends a lot of them are already talking about going back!!!!
But to get on the the brownies. So I decided that we would go out to eat for gno and then the girl's could come to my house and talk and eat brownies and hot chocolate. So I found a great recipe of Crock Pot Hot Fudge Brownies on the Crock Pot Girl's website. I have actually never made a desert in my crock pot so was very excited to try them.
So the brownies need to cook for three hours in the crock pot. Kenton helped me make the brownies. But I never told Scott was in the crock pot. The directions said to make the brownies and then leave them alone. When we came to the house after eating the brownies looked bad. Come to find out Scott thought that it was hot fudge and had been stirring the brownies!!!! They looked bad but tasted great with ice cream and hot fudge. So here is the recipe and make sure you tell your husband that they are brownies!!!!! Oh ya they where not bad and I will try them again.

Hot Fudge Brownies

1 cup boiling water
1 cup chocolate syrup
Prepare brownie mix as directed on box.

My Anniversary Present
So a couple of week ago Scott and I celebrated our 5 year anniversary. Scott got me a bread machine. I remember growing up and making bread with my mom and her bread machine. One of the things that I loved growing up and still do now is a nice slice of cinnaon bread warmed with some butter. So I am so excited to have a bread machine.

I found this one on Amazon for about $107.00. I don't know how much Scott paid for it. I have only tried three loafs in in since I got it. So far I have had two good loafs and one bad one. I tried the basic white loaf in the manual for my first attemp. It tured out pretty good. My second attemp on the other hand did not turn out good. I wanted to try a oatmeal loaf. I just used the oatmeal that I had at home. The recipe did not say what kind of oats to use. The next time I make an oatmeal bread I think that I will use regular oats instead of quick oats. You should have seen the loaf or the not so loaf!!!! The third recipe I did was out of an old cookbook from Mom's and Dad's.

This book is so old and you actually can still get in on Amazon for $2.98. They also have some newer recipes from the same lady. I made the recipe Pumpkin/Winter Squash Bread. It said that you can use canned pumpkin. I thought it turned out pretty good but next time I would put a little more spice in it.
I tried to find online about info on saving money but really could not find anything that I thought showed the true saving. I think that a regular loaf of basic white bread is about 75cent to a dollar. I spend about $1.50 on sale with Rotella Bread. So if I kept in up and kept making bread I think it would be a good thing. I guess you also have to include the cost of the machine so I don't know. I guess all I can say is it is so nice to smell homemade bread in your house. I am happy I got the bread maker. Tonight we are going to try homemade pizza dough in the bread machine. I will tell you how that turns out.

Sorry I have been busy
Well I wanted to post to tell you sorry that I have not written in five days. We where out of town in Kansas City Kansas seeing family this weekend and trying to now get back into the swing of things. I have been so out of it lately Scott has had barely anything to take to work for food. Yesterday he took a tuna sandwich to work!!! I tried to go grocery shopping yesterday but the kids did not want to shop so I did not get everything on my grocery list. I also tried to make roasted garlic yesterday for the soup I was going to make. I kind of forgot about the garlic and cooked them to long!!!!!!
So today for food for Scott I made one of my old standbys. Bear Creek Creamy Potato Soup.

I really like these soups and they are very easy. I think that they run about $3.00 a bag. I like to add fresh potatoes. I also like to serve this with cheese and bacon on the top. Sorry that this is not a recipe. I also have something going on tonight and tomorrow. So will not be making a lot of fun the next couple of days. I do plan to make a desert tomorrow so will post that. Hope to get back to my recipes soon. Take care.

Cloth Diaper Review
So I have been wanting to do something different on my blog for a couple of weeks now. I was thinking of doing a video, but don't really think that I would be good at that. I also don't know how to edit a video. So I thought that I could do a cloth diaper review with just pictures and words.
So when I started cloth diapers I bought one brand BumGenius. I actually really like them. I used them and only them for about 6 months. One of the things that I wish I would have know when I bought the BumGenius was that I wish I would have got snaps and not Velcro(hook and loop). The Velcro is starting to not stick as good now.
Then I decided to look on line for more diapers. That is where I went wrong!!! It is like an addiction. I try not to buy a lot of diapers and if I do buy them I only buy them when they are on sale. In the last three months I have bought a couple different diapers. One of the reason's why I am starting to buy them is because all my friends talk about different kinds and I wanted to talk to them about different diapers too. I also hope that one day down the road we will have another little one and I will be able to let them use the diapers too.
One of the first diapers that I bought was the Best Bottom Diaper. This diaper is sold from a web site called. http://www.nickisdiapers.com/ The Best Bottom Diaper was created by a mom who decided to take things she likes about each of her diapers and make one diaper. I bought these diapers on sale for about $12.99. That was the price for just the covers. The cover is one size fits most!!! Then the inserts I bought on sale for about $2.00 a piece. The diapers inserts come in three sizes. Size small (birth-14lbs), medium (11-22lbs), and large(16-35lbs).
Here is a picture of the covers and the inerts.
One of the things that I learned after getting these diapers that I prefer pocket diapers. One of the reasons why I like pocket diapers better is because then the pee is not directly on my daughters bare skin. I also find it very hard to reuse the covers. When my daughter goes #2 or pees in them I feel like the cover is dirty.
Another brand that I bought was called the Go Green Diapers. http://gogreendiapers.com/ I bought two of them One of them was $9.99 and one was $8.99. Both of these are one size pocket diapers and so far I really like them. One of the things that I like about these diapers is how they don't look at bulky as the BumGenius. I also feel like these absorb a lot.
Well these are just a couple of new diapers that I have tried. I am always looking for sales. Let me know if you know of a brand I should try or ones that you really like. Also let me know if you find any good sales!!! Hope you enjoy this new entry.

Another Leftover Turkey Meal
So this is what I made for supper tonight. I actually really liked it. My kids on the other hand it was a hit and miss. Madison actually really like it. Kenton on the other hand tried it but did not like it that much. Scott will have it tomorrow for supper and then I will really know. I thought that it had an interesting taste. It was kind of like a Mexican soup. It was really good. I think that it would be good to have for a pot luck or when you have someone coming over.
Leftover Turkey and Sweet Potato Soup with Black Beans and Lime(Makes 6-8 servings)
Ingredients:
1 cup diced onion (1 small onion)
1 cup diced celery
1 T olive oil
3 cups diced sweet potato, cut in pieces about 1/2 inch (orange sweet potatoes are often called Yams or Sweet Yams in U.S. stores)
2 tsp. dried oregano (I used Mexican oregano, but either kind will work)
2 tsp. ground cumin
1 tsp. ground chile powder (New Mexico chile powder preferred)
1/2 tsp. dried sage
5 cups turkey stock (can use chicken stock)
2 cans black beans, plus liquid
2 cups diced leftover turkey
2 T diced Anaheim chiles (if canned often called "green chiles"; use more if desired)
1/4 cup fresh squeezed lime juice
salt, fresh ground black pepper to taste
Instructions:
Heat olive oil in heavy soup pot, add onions and celery and saute about 5 minutes. Add sweet potatoes, oregano, cumin, chile powder, sage, and turkey stock, lower heat to a simmer, and cook about 60 minutes, stirring a few times.
Add black beans, rinsing out the can with a small amount of water and adding all bean liquid. Simmer soup 30-45 minutes more.
Add diced turkey and green chiles and simmer about 30 minutes more. Stir in fresh-squeezed lime juice, season with salt and pepper as desired, and cook 5 minutes more. Serve hot, with additional fresh lime to squeeze into soup if desired.

Turkey
So last year at Thanksgiving they had some great sales on turkeys. Scott and I bought a turkey for turkey day and then also bought an extra thinking that we would use it soon. Well it has been in our deep freeze for amost a year now. I have been really trying to clean out our deep freeze and use some of the things that we have in there instead of buying new things. So last Wednesday I put the turkey in the fridge to thaw. It was ready to cook on Sunday so we cooked it after church.
On Sunday night we had a late supper at 7pm when the turkey was done. It was really good and it was kind of like having a Thanksgiving dinner just for our family. Yesterday I made mash potaotes with gravy and stuffing to go with it. It was so good. Well due to the fact that we have all this turkey now my menu for the week changed.
So today I tried something completely new. Turkey Enchiladas. I think they turned out pretty good. I was pretty please with the idea that I made my own enchiladas sauce. One of the things that I would change is it called for cinnamon. I felt like there was a little to much cinnamon in the final product.
I am also not a big onion person and felt that this recipe had to much onion.
Turkey Enchiladas

1 First make the enchilada sauce. In a medium bowl, whisk together the chili powder, cumin, oregano, garlic powder, cinnamon, ground cloves, sugar, salt, and flour. Heat olive oil on medium heat in a cast iron pan (or other thick-bottomed sauté pan). Add the spices and cook for a minute or two, until fragrant. Slowly whisk in the stock, until smooth. Let come to a simmer, cook for a minute, then remove from heat, cover and set aside.
2 Prepare the filling. Heat olive oil in a sauté pan on medium heat. Add the chopped onion and jalapeños and cook until the onions are translucent, about 3-4 minutes. Add the garlic and cook a minute more. Remove from heat. Place onion mixture in a medium mixing bowl. Mix in the cooked turkey meat, the beans, 1 cup of the grated cheese, 1/4 cup of chopped cilantro, 2 Tbsp lime juice, and 1/2 a cup of the enchilada sauce. Add 1 to 2 teaspoons of salt, or more to taste. Set aside.

3 Preheat the oven to 350°F. Heat the pan with the enchilada sauce on medium heat. Spread 1/2 cup of the sauce over the bottom of a 9x13 casserole dish (pyrex works well). Working one at a time, dip the flour tortillas in the sauce to coat them on both sides. If the sauce is too thick, thin it with a little water. Place the tortilla in the casserole dish and place anywhere from 1/4 of a cup to 1/2 cup of the filling in the middle of the tortilla. Roll up the tortilla around the filling and place it in the casserole dish. Continue to roll up the rest of your tortillas until they fill the casserole dish. Cover the enchiladas with the remaining sauce, and sprinkle with the remaining cheese. Place in the oven and bake, uncovered, for 15 to 20 minutes, until the enchiladas are heated through and the cheese has melted.
4 Sprinkle with a little more lime juice before serving. Serve with chopped red onion, chopped avocado, fresh cilantro, sour cream or crema fresca, and thinly sliced ice berg lettuce that has been dressed with vinegar and salt (no oil).

Fontenelle Forest

So on Friday the kids and I went with my Mommy's Group to Fontenelle Forest in Bellevue Nebraska. We had lost of fun. If you like to play outside with your kids, then this is a fun place to go. It is a little pricey but the kids like it. We brought our lunch and spent about four hour there and had a great time. On Friday we got to see a whole bunch of turkeys all of the place. We also saw some pretty big birds. I have never seen them but I heard you can see deer or other animals there on a good day.
They have a little place called Acorn Acres where the kids really like to play. Here is some information on Acorn Acres. If you would like to know more then you can look at there web site.

This is what we had for supper yesterday.
So I have been craving Asian lately. So I made two things for supper. Hope you like them. One of the things that I liked about them was that the kids ate them too. It is always a good meal when the kids eat it too.
The site that I got this from is one of my new favorite sites. I really like this lady and she does a great job of keeping up with her site. I also like how she has all different kinds of foods. I hope you take a look at her site!!! http://fortheloveofcooking-recipes.blogspot.com/

Tuesdays Dinner
So sorry that I did not post anything yesterday. After making dinner on Tuesday and it taking most of nap time I decided that yesterday was a leftover day. I also have not been feeling myself lately. Just have been trying to get things done around the house and feeling where ever I turn I am cleaning up something that I cleaned up an hour ago.
I also am already starting to get nervous about winter. For those of you that know me you know how much I hate winter. I hate the cold but the worse thing is driving in it. I am already getting worried about taking Kenton to school two days a week in the snow. I have always hated driving in the snow but ever since I lived in Lincoln I have hated it more. One of the things that I like about where I live is they care about there roads and actually plow. I also like that I live close to the interstate and they always take care of that first.
http://fortheloveofcooking-recipes.blogspot.com/2010/04/beef-pot-pie.html
So this is what I made on Tuesday. One of the things that I did not like about it is how long it took for me to prepare. Needed less to say I put Kenton down for a nap and stated. We only let him sleep for about an hour and a half. By the time I cut up all the vegetables and meat and made the crust he was already waking up. So it made for a long day.
I did enjoy this pot pie but I am not to fond of mushrooms so the next time I think that I would not add them. Well hope you try this recipe sometime. Just remember that you need a good amount of time to cut everything.

One of the things that I like about where I live is they care about there roads and actually plow. I also like that I live close to the interstate and they always take care of that first.

Beef Pot Pie
The Crust:
- 2 cups of flour
- 3/4 tsp salt
- 1/3 cup of canola oil
- 6 tbsp ice water
- 2 tbsp fresh chives, minced
Stir the flour, salt, canola oil, ice water, and chives together in a bowl; mix until flour is wet. Gather the dough into a ball (mixture will be crumbly) and place between 2 sheets of plastic wrap; roll into an 1/8 inch thick oval crust (or square depending on your pan). Cover the dough with saran wrap and place in the refrigerator until ready to use.
The Filling:
- 2 tsp olive oil
- 1 lb top sirloin steak, trimmed of fat and cut into 1 inch pieces
- 1/2 sweet yellow onion, diced
- 8 oz of button mushrooms, sliced
- 2 carrots, sliced
- 4-5 cloves of garlic, minced
- 6-8 red potatoes, diced
- Sea salt and freshly cracked pepper, to taste
- 1 tsp of thyme (more if desired)
- 1 tbsp tomato paste
- 4 cups of beef broth (divided)
- 1/3 cup of cornstarch
- 2-3 tbsp fresh parsley, chopped
Preheat the oven to 450 degrees. Place the diced potatoes in a pot of water and boil for 4-5 minutes. Drain and set aside.
Heat 2 teaspoons of olive oil in a Dutch oven over medium high heat. Add the beef and sear, stirring often for 1 minute; add the onions, mushrooms, and carrots then continue to cook for 3-4 minutes. Add the minced garlic and cook, stirring constantly for 1 minute. Add the tomato paste, stirring well then deglaze pot with 1/2 cup of broth, scraping up the bits. Add an additional 3 cups of broth along with the potatoes. While the mixture is simmering, whisk together the corn starch and the remaining 1/2 cup of beef broth; stir into the beef mixture until thickened, about 2 minutes. Remove from heat and stir in the parsley. Taste and re-season with salt, pepper, or thyme if needed.
Ladle the filling into a large baking dish then place the dough on top of the filling. Crimp the edges with your fingers or a fork. Make a small slice in the center of the crust with a knife. Place the pie on top of a baking sheet covered with tin foil then place in the oven and bake for 38-40 minutes or until the crust is golden brown. Remove the pie from the oven and let it rest for 15-20 minutes before serving to allow the filling to cool and thicken. Enjoy.

So I wanted to show you what I made for the pot luck for church. I really did like them and would make them again. I did not follow the recipe because I wanted to use stuff I had at home and stuff I knew most people would eat. So I just used Pepperoni and cheese. Then I had a pizza dipping sauce. These turned out great hope you try the. They are an easy kid friendly snack or meal.

I am not going to put the recipe because I did not follow it. I also used bread dough to save money. But I followed the directions on how to make them and bake them. This was easy and good. Hope you like them. You could also do a whole loaf of bread and then put the filling in and bake for your whole fam. Yum-O
What a busy weekend!!!
So this was a really busy weekend for us. I really enjoyed it. On Friday was Scott and my Anniversary!!!! We have been married for 5 years. It does not feel like it has been that long at all. Scott and I where married in Lincoln at the United Methodist Church. I loved my wedding!!!! It took a long time to plan it all and I was so proud of doing most of the planning by myself. It is so amazing how you work so hard for something for so long and then it comes and go so fast. Getting married was one of the best days of my life. All in one day I got to marry the best man I have ever meet and we also had all of our friends and family under one roof. I think that I would do it all over again just to have all of our friends and family together!
Scott and I where not planning to do anything for our Anniversary due to the weekend being so full and there was a Fall Festival at our church that I wanted to go to. But one of my Mommy friends told me that her and her husband would watch the kids and we should go out to eat. So we did. Thanks to Matt and Tori, we got to go out to eat and even had ice cream!!! The kids also had a great time with there friends. So much Kenton did not want to leave.
Then on Saturday we had a fun day planned. We woke up late and then played until Scott got up. (He is working nights so his schedule is a little different then ours). Then we had lunch and got to carve pumpkins. This was the first year that Madison actually helped. Kenton helped last year but did not want to get messy. This year both kids helped us clean out the inside of the pumpkins. Then Scott and I finished making Mickey and Minnie. We had lots of fun.
Then on Saturday night we had free tickets to go to the Creighton Blue Jays Soccer game. It was the first time I had ever been to a soccer game. It was also the first time Scott had ever seen a Pro Game. Kenton and Madison both had fun but really enjoyed playing with the kids around us. Scott and I thought it was lot of fun to see. My head still hurts from watching them hit the ball with there head!!!!
Then on Sunday we had a busy day at church. We have finally decided to become members at Maplewood Methodist. So on Sunday we met with the Pastor to get ready for membership. They also had a great pot luck right after church. I made some yummy pizza rolls that turned out great. It also worked out good for the kids at church. They had a soup pot luck so the kids all at the pizza rolls.
Right after Church I put the kids in the car and drove to Lincoln. My Aunt and Uncle from California where staying at my Sister's house for a week. It was so good to see Aunt Sandra and Uncle Carlos. The kids and I had a great time talking and playing with them. Aunt Krista spoiled the kids like usual and got them some fun trick or treat presents. The kids had lots of fun playing with them. We also got cupcakes and took Aunt Sandra out for her Birthday!
Then on Monday it was Halloween. So the kids and I went around four blocks and got enough candy to make the dentist love us!! This year Kenton was dressed up as Tiger from Winne the Pooh. Madison was dressed up like a Butterfly. She did not care for her wings, but still looked cute. I can't wait until next year when I have to run to keep up with both of them. Next year I will defiantly need help!!!!!!
Well here is some pictures sorry this is so long. I told you we had a great busy weekend. Hope you had a good one too!!!
