Third Frozen Meal Made Today

So the third frozen meal that I wanted to make was not from the web site that I have been using.  This recipe came from a friend of my Mom's at home.  She was nice enough to make this meal for us when my uncle passed away.  I liked the meal so much I asked for the recipe.  When I was getting the recipe from her she told me that it is a great frozen meal.  So I have always wanted to make it and freeze it but never really needed a reason until now.

Here is the recipe, one of the things that I am sorry about is that she did not have the exact measurements for some of the spices so you just have to do them to your own taste.  This recipe also makes a big 9X13 pan and can feed a lot of people!
Chicken Tetrazzini Recipe

Chicken Tetarazzini

1/2 Stick of Butter
2 Cans of Mushrooms
Celery Salt
Garlic Powder
Onion Salt
Salt and Pepper
3 Cans of Chicken (I am not big on can chicken so usually just cook my own chicken.)
2 Cans of Cream of Chicken
1 Can of Milk (using the Cream of Chicken Can)
2 Cups Sour Cream
1 Cup Parmesan Cheese
1 Cup Sliced Almonds
1 Box Angel Hair Pasta

Start the water and cook the  Angel Hair Pasta according to the directions on the box.

Then in a separate pan melt the butter and cook the cans of mushrooms.  Then add all the seasoning to your taste.  After the mushrooms are hot add the chicken and heat through.

Then add the Cream of chicken and can of milk and heat.  Then add the Sour Cream and let set until pasta is done.

Then drain pasta and add to sauce.  Stir the pasta and the sauce.  Once mixed add to a greased 9X13 pan.  Sprinkle the cheese on the top of the pasta.  Then cover and cook in a 350 degree oven for an hour.  Then remove the foil and add the almonds and cook an addition 15 minutes.  Enjoy.

One of the things that I like about this recipe is that my kids really like it.  It is great with some bread and a veggie.  Can;t wait to eat this!!

Second Frozen Meal in the Freezer

Well this was so easy and I even sampled it as I shredded the meat.  I loved the taste of it and would make it again even for a nice roast.  Like I said before I found a great site and got this recipe from the same site.

One of the things that I would suggest if you wanted to get a lot of meat or meals out of this is to use a bigger roast.  I used a 4LB 5oz roast and ended up after it was cooked to only get two one pound bags of meat out of the roast.  I added the juice to the bag so they where a little bigger.

When Scott or I plan on having this for a meal all we will need to do is thaw it, heat it, and make sure that we have buns for the sandwich.  We like to make homemade fries or sweat potato fries which would also go good with this.  If we are really busy I could see myself do frozen fries and a veggie.

Here is the website where I got the French Dip Sandwiches in a Crock Pot Meal.  Like I said before I am just going to post a picture and the site.  I think that this is a great site and feel like she should get the credit.

I have about five more meals that I am going to make put plan to do a little at a time.  I wanted to do a whole day of cooking and just do it all at once.  But then found out that it would be better on our budget to get some of the ingredients a little at a time.  So that is what I have been doing buying a little at a time.  Some of the other meals that I got planned are lasagna, two chicken recipes, a chicken tetrazzini and a manicotti.  I was going to make more but was told from a friend at church that our new church family usually makes a lot of meals when babies are born!!

Since I am new at freezing ahead I am also worried that we wont eat it all in the three months and it will go to waste.  I just hope in the long run this will help me out with three kids and a husband with a crazy schedule. I hope that planning ahead will help a lot.

First Frozen Meal in the Freezer

Well the time is getting closer for baby #3 and I want to be prepared.  Right now as we speak I am 33 weeks.  With both the other kids I did not go full term so am not planning on going full term with this little one either.

With Kenton I had a rough labor and ended up with a c-section.  The recovery was hard on me and I was in a lot of pain.  On the other hand with Madison the second the c-section went good and I was up and running in about two days.  I am praying that this c-section will be like the second and I will be ready to go in a couple of days.

I do not know what to expect with having a third and am really worried about how little Miss Madison will take it.  As some of you know I watch a little girl right now and lately they both have been experiencing some jealously of one another.  I kind of have the feeling that Madison will have the jealousy toward the new baby.

So since I can't prepare a lot due to the fact that if I did it would only last a day with these kids, I have been trying to get somethings done around here that the kids can't get into.  One of the things that I have been doing is washing everything that I can get my hands on.  No mater what sex this baby  is he or she will have clean clothes ready for him or her arrival home.

Another thing that I am doing is starting to make some frozen meals for the couple of weeks after.  I like the idea of not having to cook a lot so I can keep my attention on the kids and not having to make a lot of food or clean a lot of pots and pans.

The first meal that I made this week is meatloaf.  I made three loafs that only needed to be heated and served when we need them.  I thought that this would be easy on Scott or I to just make mash potatoes on the side and go.  I ended up looking up a new recipe because I normally cook my meatloaf in the crock pot.  For these meatloaf I wanted to bake them.

I actually found a great blogger that helped me learn a lot about freezing food.  One of the things that I liked about her site was that she included the recipe.  We did end up eating one of the loafs (I made four to begin) and it was wonderful.  So I want to give credit where credit is do.

I will add the picture but if you want the recipe you should check out the site.  I plan on making a lot more of her recipes for freezing because I know that they will work and I am not very educated in freezing.  Hope you guys like her site and try some of her recipes as well.

Pictures of March, April, and May

So I look through my blog and realized that I am so far behind on doing a lot of things.   One of the things that I am behind in is getting pictures of my little ones up.  Time is just flying by here.  I feel like I just put up  the last pictures.  I also am so amazed about how my little ones are growing so fast.  Some of the pictures make both my kids look so big.  My little boy is now a big boy and getting taller everyday.  My little baby girl is now not a baby.  She even is potty training.  I was not quite ready for this but she was and saw big girl underwear and now thinks she needs to wear them instead of diapers.  I guess this is good cause I might only have one kid in diapers.  We are getting ready for baby number three but at the same time I just don't want my other two babies to grow up.  Well hope that you enjoy or pictures.
