What's for Supper tonight!!

Cheesy Scalloped Potatoes Recipe

Well hello everyone.  I wanted to share what we are having for supper tonight.  I have not tried any of these recipes before, so we will have to see who they are.  I have both of them in the oven as we speak.  The first recipe is Cheesy Scalloped Potatoes from The Taste of Home sight. http://www.tasteofhome.com/Recipes/Cheesy-Scalloped-Potatoes  Here is the recipe.

Ingredients

  • 4 pounds potatoes, peeled and sliced (about 5 large potatoes)
  • 3 tablespoons all-purpose flour
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1-1/4 cups shredded reduced-fat cheddar cheese, divided
  • 3 ounces reduced-fat Swiss cheese slices, finely chopped (3/4 cup), divided
  • 2 medium onions, finely chopped
  • 1-1/2 cups 2% milk
  • 2 tablespoons minced fresh parsley

Directions

  • Place a third of the potatoes in a shallow 3-qt. baking dish coated with cooking spray. In a small bowl, combine the flour, salt and pepper; sprinkle half over potatoes. Sprinkle with 1/4 cup of each cheese and half of the onions. Repeat layers. Top with remaining potatoes. Pour milk over all.
  • Cover and bake at 350° for 50-60 minutes or until potatoes are nearly tender. Sprinkle with remaining cheeses. Bake, uncovered, 10 minutes longer or until cheese is melted and potatoes are tender. Sprinkle with parsley. Yield: 8 servings.

The second recipe is Delicious Baked Chicken from the Allrecipe web site.  I bought bone in with skin chicken breast because of the price.  I got three big breast for around $3.00.  One of the things that I like to think about when making the a recipe is how much it is going to cost me in the long run.  I think that with both of these dishes I probably spent less then $8.00.  I will add another veggie and get away with a $10.00 meal.  I would say that is pretty good.  I just hope the family likes it.
