Finally cooked a meal!!

So we had a little problem with our deep freeze so I had to come up with some meals using some the meat in our deep freeze.  One of the things that we had in there was a big pork loin.  Normally I like to cook my pork loin slowly in the crock pot.  The problem with this loin was that it was to big so I had to find a recipe that I had to bake.  So I did a google search and found this recipe.

Honey Roasted Pork Loin

Ingredients

How to make it

  • Preheat the oven to 375F.
  • Season the pork with salt and pepper and place in a roasting pan.
  • In a separate bowl, mix together the honey, juice, oil and thyme. Pour over the pork.
  • Add the broth to the pan.
  • Bake until internal temperature reaches 150F (45-60 minutes). Baste frequently.
  • Strain the pan juices into a saucepan.
  • Reduce until slightly thickened.
  • Serve over the sliced pork

Right away I want to say that if you are not into a sweat sauce then I would go with another recipe.  With the sauce being made out of honey and orange juice this recipe was very sweat.  I thought that the pork turned out great but wish it would have been a little tinder.   I also made homemade sweat potato fries and a dipping sauce.  Hope you guys like this recipe.
